It’s still cool outside, but we all know that the hot spring and summer months are fast-approaching. Chances are that you will end up spending several of these days either lounging on a beach or sitting on top of a trendy flotation device with a nice, cold beverage in hand.

When we think of summertime, we think of relaxation, and there are few better ways to relax poolside than with an adult beverage. These two recipes will help you unleash your inner fancy-drink lover and maximize your summertime experiences. So, the next time you have a pool party, ditch the beer for one of these cocktail recipes and let us know what you think the next time you stop by.

Strawberry Sorbato and Prosecco Floats

Ingredienti:

  • 1 ½ pounds ripe strawberries, sliced
  • 1 cup sugar
  • Pinch of salt
  • ¾ cup heavy whipping cream
  • 1 ½ tablespoons fresh lemon juice
  • 1 750-ml bottle Prosecco or other sparkling white wine, chilled

Procedimento:

Toss berries, sugar, and salt in large bowl. Let stand until juicy, about 30 minutes. Puree mixture in batches in blender. Press through fine strainer into medium bowl. Mix cream and lemon juice into puree. Process in ice cream maker according to manufacturer’s instructions. Transfer to container; cover and freeze until firm, at least 3 hours and up to 2 days.

Place 1 scoop sorbato in each of 8 glasses. Fill each glass with Prosecco (sorbato will float to top).

Strawberry-Basil-Balsamic Daiquiri

Ingredienti:

  • 8 ounces dark rum
  • 1 cup halved hulled fresh strawberries, plus 4 whole strawberries for garnish
  • ¼ cup light brown sugar
  • ¼ cup loosely packed basil leaves
  • 1 tablespoon aged balsamic vinegar
  • ½ pint strawberry ice cream
  • 2 cups ice

Procedimento:

In a blender, combine all of the ingredients except the whole strawberries and blend until smooth.

Pour into chilled red wine glasses and garnish with the strawberries.
